It has a distinctive sharp and salty flavor and is hard/crumbly. Chevre, on the other hand, is a soft, creamy cheese made from goat or sheep milk (but not cow). It has a distinctive tangy/tart/earthy flavor but not salty like feta. So, feta and chevre can be goat cheese, so it is best to be specific on the type of cheese to use in a recipe. For the Greek Spinach pie, I would suggest using feta and not the chevre. And yes, chevre, can be pretty expensive. Feta cheese is great sprinkled on top of many things. I love it on top of lentils, salads or as one of the sides in a Greek mezza (a smorgasbord of falafel, cucumbers, tomatoes, tzatziki and feta cheese). Dig that feta out and start sprinkling away....and make that spinach pie. yay! something new for you to try! I love feta, but have read to stay away from soft and non-pastuerized cheeses. However, the particular brand of feta that I like I read the package and it is made from pastuerized milk, so I think I'm safe. I almost peed on myself! lol!! I have Feta cheese in the fridge. Bought it b/c it was buy 1 get 1 free.
