I just started an exercise program that suggests limiting carbs at the dinner/evening meal, and was curious what to eat that would be fun and interesting, especially since, as you say, most of the low-carb stuff is geared toward meat-centric diets! I saw a review in the food section of the local newspaper yesterday and it got great reviews.
