Guest guest Posted October 26, 2005 Report Share Posted October 26, 2005 we have lady at church who fell off her horse and broke her ankle requiring surgery with pins. safe to say she isn't up and around much right now. some of us are getting together to take over some meals for her and her family BUT my dilemma is what to take. I REALLY don't want to have to prepare a meat dish but nothing too weird either : ). I like weird stuff so it seems normal to me : ) but here in small town Iowa--it's not. does anyone have any good recommendations of something to fix or do I just take the easy way out and get a card with a Pizza Hut gift certificate (it's 1 of 3 restaurents total in our town)? What is her favorite veggie, can you call and find out? I'm sure one of use will have a great recipe that will include her favorite veggie. Guest guest Posted October 27, 2005 Report Share Posted October 27, 2005 This is perfect weather for lasagna (with spinach, finely chopped broccoli) and so easy to make without meat. You could even make a spinach quiche, which isn't strange, and again meat won't be missed. If you can find it in one of your grocery stores (I know HyVee carries it), get some smoked gouda cheese and grate some of that. It gives it a lovely " bacon " flavor. Guest guest Posted October 29, 2005 Report Share Posted October 29, 2005 HI Anne: You can do a vegetable soup, or macaroni and cheese, a lasagna or other pasta dish.
