Let me know if this is like the recipe you are missing and I'll post this in our files. " Masa Fresca Para Tamales (fresh tamale dough) 2 (1 pound 13 ounce cans white hominy (should be 6 cups) 1 cup frozen whole kernel corn, thawed 1/4 lb. vegetable shortening 1 tsp. salt 1 tsp. baking powder Grind hominy and corn a little at a time in a food grinder or food processor. Whip shortening, salt and baking powder until fluffy. Beat the shortening mixture into the ground hominy mixture, Use dough to make tamales. Makes enough dough for 15 to 16 tamales.
