Blueberry Buckle recipe

Blueberry Buckle

 

½ c. butter or margarine

¾ c. sugar

2 eggs

2 c. flour

1 tbsp. baking powder

½ tsp. salt

½ tsp. nutmeg¼ tsp. ground cloves

¾ c. milk

2 c. blueberries

Topping:

½ c. brown sugar

1/3 c. butter or margarine

¾ c. flourGrease and flour a 9” square pan. Cream butter with sugar; add eggs,

beat well. Sift flour with baking powder and spices. Add to creamed mixture

alternately with milk. Gently fold in wild blueberries; pour into cake pan. To

make the topping; blend ingredients until they resemble coarse bread crumbs.

Sprinkle evenly over batter. Bake at 375 °F for 60 minutes or until the centre

of the cake is cooked. Serves 6-8.

This is in the oven and will be my reward for cleaning/changing out

the litter box. I've only been scooping so far, but it needs a fresh

start. DH has been gone several weeks on a business trip and Im doing

it now, in spite of allergies to the litter - thank goodness DH

doesn't mind doing it normally!

 

I'll let you know how it tastes (the BUCKLE, I mean).

Now I want some. Did you know I have blueberries in the freezer?

*lol* That's why I decided to make it - earlier this week I just

stocked up on frozen fruits!! :-)

 

It smells wonderful! I made a half batch (since DH isn't here,and I

would eat the whole thing anyway) in my toaster oven, and also added

cardamom. I used whole wheat pastry flour, and soymilk instead of milk...

Now ZAmy, don't encourage me. You know my sweet tooth. I posted the lemon

pudding cake recipe and JLyn asked a question about it, I ran downstairs made it

and ate 3/4th's (:- )))))

Well, make some and take it to work... ;-)

 

PS I also used Ener-G egg replacer instead of egg.
