(:-) That's good on top. How about roasting potaoes or serving it with baked. Tell us what veggie she does like and we can help you more. Will she eat brown rice? What other grains? Do you make meatless spaghetti? You can make a crockpot of sauce up and it freezes well for future use. Will she eat baked pasta dishes, there are many good recipes in the Mexican food area. How about soft tacos? Don't get discouraged, we will come up with recipes for you. She likes corn and potatoes but what else? Avocado, tomato, peas, will she eat tofu, veggie burgers, veggie dogs? She eats white rice w/ butter. Loves ketchup (w/ french fries). I eat veggie burgers, etc. and I'm never at a loss on what to feed myself. She does say she wishes she'd try more foods. (Her father would force her to try things as in literally shoving it in her mouth...) She used to eat onion rings til she got old enough to realize there were onions in them! She does like american cheese, peanut butter and apples (only if they're peeled). She hasn't starved yet; I just keep hoping my eating habits will rub off on her. I guess you can tell from my recipe posts I love to eat, I would eat my food and grab things off my sisters plate too. Now my sister was the worst but she got better as she got older. She spent her teens years eating peanut butter sandwiches, milk, raw carrots and a just a few other things. Her 3 kids lived with me. Each one had their own food problems. One would pick each sesame seed of the top of his bun and then throw up of you told him to please eat. That kids really did test your patience but I was always OK withhim, never yelled, I had to practice my Buddhist ways though. As he grew he got better. By the time he was 16 he would start to ask me for a little taste of this or can he try that and then he would always say, what the heck was wrong with me. Onions are wonderful, I love a tomato slice, peas are yummy. The only thing he can't stand are mushrooms now. I never forced him to eat and I would try adding a touch of something different to his meals, most of the time he refused to try it though. Taking him to the market and letting him pick things he was willing to try or asking him what his friends ate helped some. Believe me there were a few times I wanted to knock his butt off the chair though......LOL Now try the ready made pizza crusts and let her decorate them with something different. Maybe some Tofurky Italian sausage, roasted red pepper, etc. Open up that girls taste buds.
