OK, I invited friends for dinner and thought that I'd make a quiche and start

with pumpkin soup that Craige sent in, however; now I find out that husband

doesn't eat quiche. (Don't Real Men Eat Quiche??? : )

So after panicing, I decided to ask all of you if you have a dish you often

serve meat eaters that come to dinner???

I'm still making the squash soup.

Thanks...I panic easliy!!

lasagna with spinach. I mix the spinach and two eggs in with the ricotta. I use

the ready for baking noodles and it's really easy.

If you want the recipe let me know.

I'm so honored that you are going to try my soup on guests! It is

great for company. My mom first debuted it at Thanksgiving a few years

ago and several of us demanded it again the year after. I then took it

to a small dinner party for New Year's Eve last year and it was all

slurped up.

I agree that something Italian would be the way to go for the main. It

seems that meat-eaters rarely miss the meat in those kinds of dishes.

I'm making Craige's squash soup, I have everything in the house for Chanda's

spinach lasagna idea so I'm going with that. I " m throwing some feta on top and

fresh tomatoes in it like Jennie suggested.

I'll have hummus too, Donna, great idea...I have those ingredients too.

And you all know what I have ready for desert.....????

Yup..Donna's Appelpaj Pie!!!!

I think this will be called the Veggie Dinner!

Or this would be good in lasagna roll ups and it would be easy to serve. Those

lacy edges look so pretty when you set the dish out on display.

HI:

I sometimes make vegetarian refried beans, and the do make your taco's, or a

vegetable lasagna, or pretty much any pasta dish with a salad makes a nice

meal. You can do an eggplant parm.

Well, everything turned out great last night for dinner!

Craige's squash soup was a great 1st course. I had made the soup the night

before so it was even more flavorful for dinner.

The spinach lasagna was a good choice with salad and crusty bread; and the

hummus was tried and I believe they liked it. Of course, Applepaj Pie was

loved!

Thank you all for your help.
