I made this last night. Everyone LOVED it. We had it with rice and artichokes.

I tell ya... If I had known being a vegetarian would be this fun, I would have

done it years ago! :o)

 

It's kind of time consuming to make but the outcome is wonderful. We have left

overs and I plan on eating them for lunch. :o) One note...make sure you have

everything ready to throw in before starting to cook. It makes it a lot easier!

 

Southeast Asia Curried Vegetable Stew

Shredded chicken can be added if desired.

 

Heat wok or large saucepan over medium heat:

1 tablespoon vegetable oil (I used extra-virgin olive oil)

Add:

1-1/2 teaspoons cumin seeds

Cook, stirring, for 1 to 2 minutes. Process in a food processor to a smooth

paste:

1/2 medium onion, coarsely chopped

One 1-inch piece fresh ginger, peeled and quartered

4 cloves garlic, peeled

1 to 2 medium fresh jalapeno peppers, seeded

1 teaspoon ground turmeric

2 tablespoons water

Add the paste to the cumin seeds and cook, stirring often, over medium-low heat

for 3 to 5 minutes. Stir in:

One 14-ounce can unsweetened coconut milk

1/2 cup chicken or vegetable stock

1 pound sweet potatoes, peeled and cut into 3/4-inch cubes

Bring to a boil. Reduce the heat and simmer, covered, for 8 minutes. Stir in:

3 cups broccoli florets and cut stems

One 10-1/2 ounce package firm tofu, or 8 ounces tempeh, cut into 3/4-inch

cubes (you can add chicken if you desire instead of tofu or tempeh)

Simmer, covered until the broccoli is tender, about 10 minutes. Add and bring

to a boil:

1 large tomato, coarsely chopped

Combine and stir in:

3 tablespoons fresh lime juice

2 tablespoons water

2 tablespoons all-purpose flour

Boil, stirring, until thickened, about 1 minute. Stir in:

1/2 to 1 teaspoon chili paste (I used chili powder since my store didnt

have chili paste)

Salt and ground black pepper to taste

Spoon the vegetable curry over rice and sprinkle with freshly chopped cilantro

and chopped cashews (optional).
