I have a few recipes with them in burgers but can't seem to find them right now : ). being as it is soup weather where I am, here are 2 of my favorite lentil soup recipes : ). take care : )................ Lentil Soup with Fruit 2 c. dry lentils 8 c. water 2 c. minced onions 2 tsp ground cumin 2 tsp dry mustard 2 tbsp minced garlic 1 c. minced dried apricots 1 1/2-2 tsp salt 3-4 tbsp balsamic vinegar 1. place lentils in soup pot with water and bring to boil. ceover, reduce to simmer, and cook 15 minutes. add onions, cumin, and mustard and continue to simmer, covered, till lentils very soft. add water if necessary. 2. add garlic, apricots, and salt; cover and let simmer another 15 minutes or so. stir in rest. 3. heat gently; top with few slivers of dried apricots. serves 6-8 Lentil and Brown Rice Soup 2/3 c. dry lentils 1/3 c. raw brown rice 2 tbsp olive oil 2 cloves garlic, minced 2 tbsp soy sauce 2 bay leaves 1 small onion, finely chopped 2 medium carrots, thinly sliced handful celery leaves 14 oz can tomatoes, undrained 1/4 c. red wine or sherry 1 tsp each basil and paprika 1/2 tsp each oregano and thyme salt/pepper place first 6 ingredients in soup pot and cover with 6 c. water. bring to boil, reduce heat, and simmer, covered, over medium heat 10 minutes. add rest ingredients and simmer over low heat 40-45 minutes or till done. season with salt/pepper to taste. serves 6 Anne Quote Link to comment Share on other sites More sharing options...

I think I either got it from allrecipes.com or a veg soup cookbook from library? I don't really know--I have had the recipe forever and I love it : ). dried apricots alone don't appeal to me but for some reason with lentils and vinegar they are superb : )....take care : ).......... I never add boullion or salt to the water when cooking brown lentils. Oh, J Lyn, you must try them; they cook up so quickly 20-30 minutes and are very versatile. The other night I didn't know what to make, so I cooked up some lentils, sauteed some veggies and cooked up some barley, I topped everything with a dash of Braggs. I've never made them, but I'm pretty sure you have to take them out of the pod somehow, and then after that peel the skin off the individual beans... (Or did you not get fresh ones?)
