seitan success : )

made a " chiken " cutlet recipe from Bryanna Grogan and it actually

turned out. the one time I tried making seitan--totally nasty. the

only unnerving part is the texture and taste are VERY close to the

real thing--it kind of took me back a bit : ). does anyone get the

heebie-jeebies eating meat subs or is it just me?

 

my next goal is to make tofu again. I can get organic soybeans CHEAP

and could make multiple batches of seasoned tofu. seasoned tofu at the

store is almost $6/8 oz. I figured out making the same amount at home

would be about 50 cents. it's not a hard process and is rather fun

with kids : ). I may try my hand at homemade soymilk too : ).

I think non-meat products made to look and taste just like meat dishes is

pointless. There are some Chinese restaurants that have their entire menu

full of mock meat dishes and although I enjoy the dishes, I don't really

think of what I'm eating as being like the meat it's supposed to be like. I

still think of it as tofu or seitan or whatever. I eat those things things

because I like the way they taste, not because they remind me of meat. But

maybe those types of dishes are good for people trying to wean themselves

off of meat.

Speaking as a new vegan, the other side here for me is: I like the things

that look and taste rather like meat. It is comforting to me at this point.

I mean, I've jumped ship and need some things to buoy me while I learn to

swim in the uncharted waters (at least for me and dh they are uncharted).

These foods and products are just the ticket. I bet they help a lot of other

newbies learn to swim a lot quicker also. :>)

I actually tried the seitan in a shepherd's pie yesterday and it was

so good : ). weird but good : ). today I plan on making a potpie with

it and the leftover " stock " . I didn't care for the Shepherd's Pie I

made with the veggies they used but will change for my tastes next

time--the concept tasted good though--veggies over mashed potatoes

with ladle of mushroom gravy. the mushroom gravy recipe in files

section--mmm good : ). it is going with me Thanksgiving Day-- I could

easily make a meal of mashed potatoes with it. take care : )....
