I would be in the same boat as your friend although i don't have as many kids : ). the chiken cutlets might be OK to cut in chunks, dip in some kind of liquid, and roll in seasoned breadcrumbs. is there a such thing as TVP chunks that could be re-constituted in unchiken broth and then rolled in seasoned breadcrumbs? I'm guessing with 5 kids she doesn't have much time and chiken cutlets are kind of a pain to make--not hard but long process. another idea I am rolling around in my head is just simple tofu nuggets. I have some small canape-type cutters that I may try for different shapes, roll in crumbs, and fry. my kids like novelty : ). will get back to you : )......... Guest guest Posted November 7, 2005 Report Share Posted November 7, 2005 Firm water packed tofu, cut into squares/nuggets...what there is time for. Soymilk and arrowroot to dip in. Shake and Bake (not the most healthy but very good for the job) i always use original " chicken " breading. (its vegan!)
