Guest guest Posted November 7, 2005 Report Share Posted November 7, 2005 So, although my husband and I are going to Belgium for Thanksgiving (just for fun), we decided last night that we are going to do a small feast for just the two of us the weekend before. I started to get really excited about it. What got me thinking was I was looking at the flyer from a health food store in town and the Now & Zen unTurkey is on sale for only $17. It comes with gravy and stuffing, which aren't bad. And I wanted an excuse to make the Volcano Potatoes. I told my husband about that recipe and he just about had a coronary on the spot. Having not grown up in the South like I did (well, northern Virginia, but my dad's family is from Roanoke, so they have plenty of Southern cooking traditions, some of which smell really, really foul, like kidney stew, BLECH! -- for breakfast!!!), my husband has been eager to get into kale lately. I don't really know why because I doubt he's ever had it with the ham hock (he's been veggie since he was in high school). But anyway, we will have that. I just have to pick which method. Can't say I've ever had kale with Thanksgiving, but isn't that what veggie Thanksgivings are all about, doing things slightly differently? We'll also have another recipe of my mom's, the very simple but delicious roasted tomatoes and artichoke hearts. I don't think I posted that one here yet, but I definitely will. And apple pie. I think that should be more than enough food for the two of us. And we will have 4 days to eat all the leftovers. Mmmm... I'm salivating! Guest guest Posted November 9, 2005 Report Share Posted November 9, 2005 We're gonna have greens and turnips, with unchicken broth <g>, sweet taters and vegan marshmallows, Tofurky, cornbread dressin' with egg replacers and/or flax instead of the usual eggs, homemade Southern angel biscuits made with wholewheat pastry flour (a first!), soy margarine, jam (NO HONEY! lol ever again), sorghum, green bean casserole with portobellos, annnnd...hmmm...I wonder if we can have cranberry sauce? is that vegan? is there a way to GET vegan cranberry sauce if not? can anybody help me here, please? And for dessert, boiled custard and perhaps chess pie redone...lol...should be quite interesting!!
