Chili is a great idea. You can have cheese for the non-vegans (if the vegans don't care). And tacos have always served me well--have a variety of fillings like soy meat, black beans, potatoes (cut them up and fry them with taco seasoning--be sure to check the ingredients on whatever you buy) and then the fixings (cabbage, onion, fake cheese, tomatoes, guacamole, etc.) You can make spanish rice or a corn salsa to go on the side. --Laura Quote Link to comment Share on other sites More sharing options...

I'm going on week #6 of my new vegetarian life I've been using the old favorites and substituting meat alternatives, but I'm ready to explore new foods. Most of the green leafy things in the produce department are foriegn to me - I grew up eating corn, carrots and green beans served with meat and potatoes/rice. I'd like to break this habit before it gets passed on to my kids. Ideas are greatly appreciated. I don't like spicy things and need to limit high-glucose veggies for hubby. Guest guest Posted November 7, 2005 Report Share Posted November 7, 2005 I am a bit odd, <understatement cough> as soon as my feet hit the floor: dong quai tea with blackstrap molasses or maple syrup breakfast: some kind of veggie, usually greens snack: bowl of oatmeal or barley oatmeal combo lunch, whatever is left over from dinner last night, or if no leftovers I will have a broccoli stir-fry with olive oil and veggie broth, and throw in whatever else is here like maybe carrots and summer squash or zucchini or whatever, and have apples in pumpkin butter for a dessert. snack: veggies and dip, whatever I have, or some yogurt with granola and maple syrup in it. dinner: I do a good dinner, usually with recipes fromthis group snack: whatever appeals to me likethe garbanzo beans I am gonna make, toasted pumpkin seeds, cup of tea of course, either honeybush to chai, maybe some soy ice cream, or I even heat up some greens again. it varies from day to day, but that is usually how it is. hugs Chanda - casonnier Monday, November 07, 2005 11:36 AM Need Menu Ideas Anyone want to share what you typically eat for breakfast, lunch, dinner for a week or so? I take leftovers from dinner the night before for lunch or a veggie dog or I make a sandwich, something like that and a piece of fruit. Guest guest Posted November 8, 2005 Report Share Posted November 8, 2005 Hi Cara: This past week for breakfast I have been having some instant oatmeal made with vanilla soy milk and I have been mixing in a spoonful of ground flax seeds. Some morning I have toast with some peanut butter. You could also have some cereal I like to have mine with vanilla soymilk and some fruit added. For lunch a lot of times I have what is left from dinner the night before. Or I cook up a little bit of brown rice and make up some veggie and maybe some baked tofu or some other meat substitute. Last night for dinner we baked up some potato skins for dinner we put some cheese and roasted garlic in them. Then on the side my daughter and I had some stir fried veggies. For dinner on Sunday we had my vegetarian chili, my husband wanted it Cincinnati style so I made some spaghetti to add into to it. Guest guest Posted November 9, 2005 Report Share Posted November 9, 2005 As someone on her fourth day of being vegan, coming from three months of vegetarianism, this is what I've gotten into the habit of thus far: (subject to change, lol) Breakfast -- leftovers from the night before, stirfry generally of 'shrooms, peppers, olives, onions, garlic, maybe corn and black/pinto beans, or some similar concoction; could also be Boca crumbles and stewed tomatoes and sauteed portabellos in olive oil; now with soycheese which I am happy to say is YUMMY! Midmorning snack -- big bowl of slow oatmeal (rolled oats, ha ha), organic sugar and soymilk; on occasion I will throw in dried cranberries. Or I might eat a bowl of my homemade muesli instead. Spring water all day long; green decaf tea and black decaf tea, as well as fruity herbals and mint teas, hot, also all day long ( I am a Type II diabetic and have a history of bladder infections, thus the liquids all the time for preventive maintenance--plus I just love tea!) Lunch -- Tofurky sandwich with smoked 'turkey' on wholegrain bread, with lettuce and thick slices of tomato, and some vegan mayo; maybe soycheese too; the obligatory sweet tea with lots of ice. Or a salad with corn, beans, fried okra and tomatoes on lettuce. Or a can of pintos or blackbeans heated with soycheese melted on top and some cumin sprinkled over it all. Etc.
