Yes I am. LOL Looks like the pot has a turban on the top. The steam won't

escape from the pan lid and the wet towel works as a sauna. The Persian Lentils

& Rice dish I posted cooks the same way. That is the same dish I was cooking

and my ex happened to come by and asked me if I had Arafat on the stove. He

stuck around to enjoy a most delicious meal.

This potato and rice tahdeeg is really wonderful. Don't worry, the towel will

not catch on fire. It will be wet and stay wet from the steam, then your twist

it around the lid and the fire is very low.

OK, Donna, I was following this recipe and thinking, " Yes, this is comfort

food and easy to make " ! However; I must have read the " towel and lid thing "

several times. You are telling me that a damp towel, around a covered pot will

steam the rice?? LOL

<<Now cover pot and take a dish towel, soak it in water and squeeze. Wrap the

rim of the lid with the dish towel. This will steam the rice. Cook this on a

low simmer for 20 minutes. >>

My dish towel I used was a white one with blue checked lines so he was right.LOL

Trust me on this recipe, it's good and the rice really puffs up, unlike just

boiling it for 20 mins. Just ask if you have any questions.
