I only had one zucchini, cause I made soup last night and used all but one, so I cut the recipe in half. I was still a tad short of a cup so I added some fresh chopped spinach. I did add chopped onion and some yeast flakes. They came out really good. They fryup nice and brown. My husband and I really liked them. Great recipe.
