" Eggnog Cookies " 1 1/4 cups sugar 3/4 cup butter, softened 1/2 cup eggnog 1 tsp. vanilla 2 egg yolks 2 1/4 cups flour 1 tsp. baking powder 1 tsp. nutmeg 1/2 tsp. cinnamon (I always toss a dash of cardamom in too) Preheat oven to 300 degrees. Combine all dry ingredients into a bowl and mix well, set aside. Cream sugar and butter together until light and fluffy. Add eggnog, vanilla and egg yolks, beat until smooth. Add the dry ingredients and beat at low speed until just combined. Don't over beat. Drop by teaspoonsful onto ungreased cookie sheet 1-inch apart. Sprinkle very lightly with a little bit of nutmeg and bake 20 minutes until bottoms brown lightly. Transfer to a wire rack too cool. " Wooden Ships on the water, very free and easy. I can easily sub the other ingredients that are not vegan here, but am at a loss for stick soybutter...an online source is great too... Thanks! I buy smart balance light when i can't get somewhere that sells EB. I did a search on " soy margarine " and found, sure enough, that Shedd's makes Willow Run. Of all things, Shedd's??? LOL. I don't know, seems mighty strange to me, that Shedd's makes soy butter somehow. I'll check out Earthbalance as well.
