I forgot I had this recipe. Came out of the newspaper last year.

 

Garbanzo/Chickpea Loaf

 

3 cups garbanzo beans drained and mashed

3/4 cup finely chopped celery

1/2 cup chopped onion

1 cup Italian seasoned breadcrumbs

1/3 cup tomato sauce or spaghetti sauce

2 tablespoons of wheat germ or ground flaxseed

1 cup ground walnuts

3 tablespoons canola oil

1 tablespoon dried oregano

2 eggs slightly beaten

dash

 

Preheat oven to 375 degrees

Mix all together and turn into a greased 9X5 loaf pan. Cover with foil and bake

for 35 minutes. Take the foil off and baste with a little extra pasta sauce and

sprinkle parmesan on top during the last 10 minutes of baking.
