I've had one for years and have used it exactly once to make split pea soup. I know many people love crockpot cooking and use it for everything, but I always felt that it was geared mostly toward those recipes that were meat/poultry related. I guess I need to do some research on veggie crockpot cooking. It would be nice to come home to dinner already cooked which brings me to one of my biggest concerns....leaving it on all day. I use a really big can of hot chili beans with the sauce, a can of hominy (drained) and a package of Melissa's soy Chorizo. I just dump it all in and give it a stir. I cook it on high for 4 hours (you could do it on low for longer). My family devours it--especially the kids!
