I just made this over the weekend with some leftover applesauce so I didn't have to search for my recipe. Wonderful way to use up extra applesauce. Double recipe and make 2 loaves. " Applesauce Bread " 3/4 cup sugar 1/2 cup margarine or butter siftened 2 eggs 1 cup applesauce 3/4 tsp. cinnamon 1/3 cup milk (soy works) 1 tsp vanilla 2 cups all purpose flour 1/2 cup chopped nuts (optional) 1 tsp. baking soda 1/2 tsp. salt Preheat oven to 350 degrees and grease a 9X5 or 8X4 loaf pan. In large bowl combine sugar and margarine and beat until light and fluffy. Add eggs beat well. Add applesauce, milk and vanilla, blend well. In a small bowl combine flour, baking soda, cinnamon, nuts and salt. Mix well. Add to the applesauce mixture and stir just until dry ingredients are moistened. Pour into greased pan. Bake for 50 to 60 minutes or until toothpick unserted in center comes out clean. Cool 5 minutes and remove from pan. Place on wire rack to finish cooling. " The reason we're succesful, darling?
