Let me know, I will ask my BIL's brother , the Cancun summer chef. I cook a lot with napoles cacuts. Describe the dish you are trying to find and I will help you. It was at a Mexican restaurant and was an appetizer. It was like a small rolled up burrito but only about two or three inches long and maybe about 1/2 inch in diameter. My guess it was fried. Then they put shredded lettuce, sour cream, guacomole and sauce over the top of it plus maybe some other type of cheese sprinkled over the top. Thanks! I may just try experimenting since it seems relatively simple. Get a jar of napoles (cactus) you can use fresh but they are hard to handle and a lot of work. Rinse the jar cactus and start from there. I like to saute it with onions, peppers, tomatoes, etc. Steam the flour tortilla and stuff with the napoles mixture in a thin long line (don't stuff like a fat burrito). Roll up and fold ends in as you roll. Hold with toothpicks. You can fry these and then when golden, drain on paper towels and cut in 1 1/2 to 2 inch pieces and garnish with sour cream, grated cheese, olives, green onions chopped, cilantro chopped, little salsa, etc. These make wonderful appetizers, lay them on a bed of lettuce leaves and garnish. There are a lot of small villages in Mexico that start with the 3 letters TLA so the dish you ate could have been names after a little village. They also have napoles in the produce section here but probably that even requires more, well information & handling. I used to make mine with chicken inside, but now use beans. You could use any filling that you like. I have travelled quite a bit in Mexico and speak Spanish good enough to get along. Thee are a few towns close to Guadalajara, central- southern part of Mexico that begin with Tl...Tlaquepaque - Tlaomulco etc. Maybe this spelling originated in this area of Mexico. They are also listed on some menus as flautas. Warm the tortilla, put in your filling at one edge and roll up and secure with a toothpick or two and deep fry. There is a right side and a wrong side of the tortilla. Roll it one way and it rolls nicely, but roll it from the other side and the tortilla splits. Can serve with just guacamole. This reestauant was just being fancy with the addition of the lettuce etc. The cheese that they put on was probably a Mexican cheese, most likely Cojio. You can serve three of these on a plate along with beans and rice. Hope that this is what you were looking for. If not, then I just gave you a recipe for another dish.
