Beet Carrot Curry

 

 

1/4 cup ghee or olive oil

10 large carrots, peeled and sliced 1/2 "

7 beets

2 onions, diced

2 " piece ginger, minced

10 cloves garlic

2 Tbsp. turmeric

1 tsp. coriander powder

2 tsp. cumin seeds

1 tsp. ajwain seeds

1 tsp black pepper

salt to taste

 

 

Steam beets and carrots. Run cold water over beets and remove skin.

Dice in 3/4 " squares.

Saute onions, ginger and garlic until well don. Add Turmeric,

coriander, cumin and ajwan.

Serve with Basmati rice, chappatis and lots of cilantro leaves on top.
