Guest guest Posted January 2, 2007 Report Share Posted January 2, 2007 Spicy Cauliflower Tapas 2 teaspoons olive oil 2 cloves garlic, peeled and minced 1 1/2 teaspoons red pepper flakes 1 large head cauliflower, separated into flowerets 1/3 cup fresh lemon juice 1 tablespoon grated lemon peel 1/2 cup chopped fresh cilantro coarse salt, optional Heat olive oil in a small skillet, add garlic and red pepper flakes. Remove from heat and cool completely. Using a large saucepan, place cauliflower in a steamer rack over boiling water. Cover and cook until firm but tender. Place into a glass medium-sized bowl. Add lemon juice and grated peel to cooled flavored oil and mix well. Pour over warm cauliflower; toss gently and cool, covered, to room temperature. Just before serving, too with chopped cilantro. Sprinkle with coarse salt, if desired. Makes 4 servings. Calories 104. Carbohydrates 16 g, Fat 2.6 g, Cholesterol 0 mg, Fiber 2 g, Sodium 120 mg, Protein 5 g.
