Guest guest Posted January 22, 2007 Report Share Posted January 22, 2007 Stuffed Mushrooms 12 to 15 open cap mushrooms 4 scallions, finely chopped 2 cloves garlic, minced 2 green chilies, minced 4 tsps. olive oil 3 tbsps. fresh brown bread crumbs 1 tsp. oregano or fresh cilantro, finely chopped 3 tbsps. cheddar cheese Wash mushrooms and pat dry. Remove stalks and chop stalks finely. Saute scallions garlic, chilies and mushroom stalks in 2 tsps. oil. Transfer this mixture onto a bowl. Mix in the oregano and bread crumbs and set aside Crumble cheese into small pieces and add it to the prepared mixture. Mix well and spoon stuffing into mushroom caps. Drizzle remaining oil onto mushroom and grill over hot coals for 10 minutes. Remember to oil grilling racks. Or broil in oven for 10 minutes at 400 degrees. Serve hot. Makes 4 servings.
