Guest guest
Hi Christine: I too was not a fan of rice pudding until I started working for a restaurant that made there own. Also a greek family recipe. I have not made my own but I now love rice pudding. Thank you for sharing this recipe. Gayle britton618 <cl.britton Tue, 07 Mar 2006 11:30:56 -0000 Chai-spiced Rice Pudding I wasn't a huge fan of rice pudding until I started working at a restaurant where the recipe was an old greek family one. After that, I sort of got hooked on it, and it's the perfect comfort food, whether hot or cold. Chai has gained much popularity here in the United States over the past few years. However, living in Kenya for a few years when I was younger, chai was served everyday, almost everywhere you went. The combination of cinnamon, cardamom, and allspice make a great warming combination, and combined with the creaminess of the rice pudding, it makes a gorgeous comfort food. The finished recipe can be seen at http://28cooks.blogspot.com Chai-spiced Rice Pudding 5 c soymilk or almond milk 1 c medium grain rice 2/3 c sugar 1/3 tsp salt 1/8 c crystallized ginger, finely diced 1/2 tsp cinnamon a very scant 1/2 tsp cardamom 1/2 tsp allspice 1/8 tsp nutmeg Bring milk, rice, sugar, and salt to a boil over high heat. Lower heat to medium low, and simmer uncovered, stirring frequently, until rice is tender. *Do not cook all of the moisture out. Pudding will thicken up as it sits. Remove from heat and stir in spices. Serve warm or cold. Enjoy! Christiane

Guest guest
Chai-Spiced Rice Pudding 5 cups skim milk or soy milk 1 cup arborio or jasmine rice 2/3 cup sugar 1/4 teaspoon salt 1/4 cup finely chopped crystallized ginger 3/4 teaspoon ground cinnamon 1/2 teaspoon ground cardamom 1/2 teaspoon ground allspice 1/2 cup golden raisins Stir milk, rice, sugar, and salt in heavy large saucepan over high heat until sugar dissolves and mixture comes to boil. Reduce heat to medium-low and gently simmer uncovered until pudding is thick and rice is tender, stirring frequently, about 45 minutes. Mix in ginger, raisins and spices. Spoon warm pudding into bowls. You may wish to garnish with a cinnamon stick. Serves 4 to 6. ______________________________\ ____ It's here! Your new message!
