Guest guest Posted March 27, 2007 Report Share Posted March 27, 2007 Cucumber Pancakes - Taushe Dhodak India (makes 5) 1/4 cup cucumber, peeled and grated 2 cups semolina (rawa) 1 small onion chopped fine 1 or more green chilli chopped fine 2 tablespoons grated coconut 1 tablespoon cilantro chopped 1-2 tablespoons yogurt salt to taste ghee/ butter for frying Mix the cucumber, onion, cilantro, chilli and coconut with the semolina. Add the yogurt and salt and mix into the dough. Add water slowly and begin kneading. When all the the dough can be gathered into a ball, it is ready. Apply butter on your palms to prevent the flour from sticking. Make round balls with the dough. The balls will have to be slightly big as dhodaks are rolled by hand. Take a clean plastic sheet and grease one side. Take one ball, flatten it and place it in the center of the sheet. Keep flattening the ball in a circular motion to make a disc. Dip fingers in water to make patting easier. The disc should be evenly thick. Heat a griddle with a little ghee. Lift the rolled thalipeeth off the sheet and place on the griddle. Apply ghee along the edges and cover with a lid. Remove after a minute and fry till slightly brown. Repeat this process for the other side. Serve with chutney and (if you want the real Mccoy) butter!! Variations - * Use cream of rice (tandul rawa) and grated zucchini * Use rice flour and make small, thin pancakes like dosas * Use watermelon, musk melon or cucumber, grated jaggery and cardamom powder for a sweeter version ************************************** AOL now offers free email to everyone.
