This makes 2 cups. Excellent flavor.

 

Huitlacoche Salsa

 

2 tablespoons olive oil or corn oil

1 red onion, finely diced

1 green bell pepper, finely diced

1 red bell pepper, finely diced

1 yellow bell pepper, finely diced

1 or 2 jalapeno, finely minced

2 cans huitlacoche, 6 ozs. each, or 1/2 lb. fresh

huitlacoche *** see bottom link for explanation

1 cup balsamic vinegar

1/2 cup extra virgin olive oil

salt to taste

freshly ground black pepper to taste

1/2 cup finely chopped scallion

1/2 cup finely chopped cilantro

 

In a large saute pan, heat the olive oil. Add the

onion, peppers, and jalapeño, and saute for 5 minutes.

Add the huitlacoche, deglaze with the vinegar and oil,

and season with salt and pepper.

Set aside to cool for 10 minutes. When the mixture has

cooled, mix in the scallions and cilantro.
