Guest guest Posted September 25, 2007 Report Share Posted September 25, 2007 Black Bean and Cantaloupe Salsa 1 cup cooked or canned whole black beans 1 very ripe cantaloupe, diced 1/2 red bell pepper, diced 1/2 green bell pepper, diced 3/4 cup canned pineapple juice 1/2 red onion, thinly sliced 1/2 cup fresh lime juice 1/2 cup chopped cilantro 1 tablespoon ground cumin salt and freshly ground pepper to taste To make salsa, combine all of the ingredients in a large bowl, cover and refrigerate for at least an hour.
