Malabar Masala-India

 

1 tsp. Tamarind, powdered

1 tsp. Coriander

1 tsp. Cayenne

1 tsp. Turmeric

2 tsps. Cumin

3 tsps. Fenugreek

2 tsps. Black pepper

2 tsps. Mustard, powdered

 

Dry roast all of the spices in a heavy skillet over

medium-high heat. The whole process should take about

10 minutes. Let cool. Transfer spices to a grinder and

blend until smooth. Store in an airtight jar.
