Guest guest Posted March 25, 2008 Report Share Posted March 25, 2008 Aromatic Kidney Beans Sambar 2 tbsps. mild vegetable oil 1/2 tsp. mustard seeds 1tbsp. ground coriander 2 tsps. ground cumin 1 tsp. sambar powder 1/4 tsp. cayenne 1/2 cup chopped tomatoes 6 baby carrots 2 Brussels sprouts, quartered 1 cup cooked kidney beans 2 cups water 1tbsp. brown sugar 1 tsp. salt chopped fresh chives Heat the oil in a large heavy saucepan or skillet over moderate heat. Add the mustard seeds. When the seeds begin to pop and splutter, stir in the coriander, cumin, sambar powder, and cayenne. Stir and cook, until aromatic 30 seconds. Add the vegetables and cook 3 to 4 minutes. Add the beans, water, sugar and salt. Simmer, until the flavors blend, and the beans still hold their shape, for 10 minutes.
