Guest guest Posted June 8, 2008 Report Share Posted June 8, 2008 Mushroom Crustades Ingredients: · 3 tablespoons butter · 1 tablespoon parsley, chopped · 3 tablespoons shallots, finely chopped · 1 1/2 tablespoons chives · 1/2 pound mushrooms, chopped · 1/2 teaspoon lemon juice · 3 tablespoons flour · 1/2 cup heavy cream · 4 tablespoons butter · 1/2 teaspoon salt · 24 crustades or small pastry shells · 1/8 teaspoon cayenne pepper Preparation: Heat 3 tablespoons butter and sauté shallots. Add mushrooms and sauté until all liquid evaporates. Remove from heat and sprinkle the flour over the mixture; stir thoroughly. Add heavy cream. Blend well and return to heat, bringing mixture to a boil. Lower to simmer and cook until thick. Remove from heat and add salt, cayenne, parsley, chives, and lemon juice. Taste for additional seasoning. Preheat oven to 350°. Mound filling into crustades (or small pastry shells).. dot with butter. Arrange on cookie sheet and bake for 10 minutes.
