Guest guest Posted October 4, 2008 Report Share Posted October 4, 2008 *Zucchini Shreds With Ginger* ** *30 milliliters vegetable oil* *5 milliliters whole cumin* *10 grams ginger, shredded* *10 grams green chili peppers, shredded* *500 gram zucchini, cut into long thin strips* *1 medium ripe tomato, peeled, seeded and sliced* *7 1/2 milliliters lemon juice* *salt to taste* *15 milliliters fresh coriander, chopped* ** *1. Heat the oil in a large frying pan over high heat for 3 minutes.* *2. Add the cumin, let the oil darken slightly (about 10 seconds) and add ginger and chili. Cook for 30 seconds, stirring frequently.* *3. Add the zucchini and stir-fry for 3 to 4 minutes. Add tomato during the last 2 minutes of cooking.* *4. Turn off the heat.
