Cilantro as you mentioned, the brown is most likely a Tamarind sauce that can be bought in Indian/Asian markets. The chickpea one I am not familiar with, That might be typical to that particular restaurant. There are many chutneys that are just wonderful... like the coconut one MMMMMMMMMMmmmmmmmmmmmmmm YUM! The brown one is Tamarind sauce... it's a bit sweet, right? I don't like sweet but I sure love the green one. The chickpeas baffle me.....? the ones we go to the 3rd dish is a pickled onion or else a hot carrot or lime pickle. GREEN CHUTNEY INGREDIENTS - 1 bunch fresh cilantro - 1 clove garlic - 1 tablespoon minced fresh ginger root - 1 minced hot green chile peppers - 1 tablespoon peanuts - salt to taste - 2 tablespoons lemon juice ** - <http://allrecipes.com/Recipe/Green-Chutney/SaveToRecipeBox.ashx> ** DIRECTIONS 1. Blend the following in a food processor until smooth: cilantro, garlic, ginger, green chili, peanuts, salt to taste, and lemon juice.
