ok, silly question. Do you scrub the cactus before cooking to get the spines

off? Or after its cooked? Amy

vigorously. Pour vinaigrette over salad; toss gently to coat. Cover and

chill. Serves 4.

I had something like this at a restaurant once and it was really, really

good -- what does the cactus that you use look like? I've seen some at

Walmart, I assume that's the right kind!

I'm not sure where you live, but in Texas, they sell the prickly-

pear/nopal already de-spined. In fact, my Mexican neighbors somehow

keep the cactus in their yards free of the evil spines.

 

If you're lazy, you can already buy it diced. If you're not in the

southwest, then you may have to look for an ethnic market.
