I would use some thawed frozen cauliflower, or you can use potatoes. Either way

you go just put in the blender with some broth from your soup and blend away

until smooth then stir back into your soup.

question for the group

If I want to make a creamed soup, could I thicken it up with nutritional yeast?

I have been meaning to ask this question for a few months now.

I don't know the answer about nutritional yeast. But I sometimes

thicken soups with barley flour. Gayle's suggestion is also very good.

It would take a lot to thicken it and I'm not sure it would really thicken it,

but would give it a more buttery taste. I would not add more than a couple of

Tablespoons or so personally though. You could thicken it also with some

cornstarch added to a little cold water and then stir it into the soup. Stir

quite frequently until thickened. It won't take long, but if you don't stir it

could start to stick to the bottom of your pot.

Hi

I am from England and I keep hearing about " biscuits " - I have a feeling that

they have a different meaning outside England - can someone explain to me what

they are and if possible provide a recipe for them and Green Bean Casserole (we

don't have that here either)?

And finally....... Christmas is coming - has anyone got a nice recipe for a main

(entree)?

Many Thanks

Mel

Here in Canada, biscuits are a quick bread made with flour, salt, shortening

and baking powder.

They are definitely not cookies. The dough is usually rolled out, cut into

small rounds (cookie size, yes) and baked for about 10 minutes.

I have a recipe for drop biscuits, which I prefer to the rolling-out

business. Will post it at Stubblejumpers one of these days, in the " In the

Kitchen " section, but I don't leave the recipes for long. It is a

revolving-door area for now, as I plan to offer a Stubblejumpers Café recipe

book once the collection is complete.

When I get the time to post my drop-biscuit recipe, I will try to remember

to post it to this list as well.

In the meantime, here is another biscuit recipe that my family loves.

Cottage Cheese Biscuits

2 c flour (white, or half whole wheat)

4 tsp baking powder

½ tsp salt

¼ tsp pepper

1 tb parsley flakes

Mix, make well in centre.

Beat 1 egg.

Add 1 c cottage cheese

¼ c milk

2 tb cooking oil

Put into well in centre of dry ingredients.

Knead 8 to 10 times. Pat dough out to ¾ " thick. Cut into 12 biscuits. Bake

in preheated oven for 10 to 12 minutes at 425F.

I don't have an actual green bean casserole recipe, but try this:

Green Bean Extravaganza

1/4 c butter, softened

1/2 tsp dried marjoram

1/2 tsp dried basil

1/2 tsp dried chervil (I do not even know what this is, so never have used

it)

1 tsp chopped parsley (or 1/2 tsp dried)

1 tsp chopped chives

1/8 tsp dried savory

1/8 tsp dried thyme

1 lb green stringbeans

1 small onion, chopped

1 clove garlic, finely chopped

boiling salted water

1/4 c sunflower seed kernels

salt and pepper

Mix first 8 ingredients together.

Wash beans, remove ends. Put onion and garlic in boiling water (just enough

to cover the bottom) in a large skillet. Add beans, cover, and cook at

medium heat until crisp-tender (about 8 minutes).

Pour off excess liquid. Add the herb butter and sunflower seeds and mix. Add

salt and pepper to taste and toss over medium heat for 1 minute.

Hi Mel:

Biscuits are a type of bread that you roll out and cut in circles and bake

or drop from a spoon and bake. They are good with butter, jelly, honey or

with gravy.

We have ham for Christmas- we put brown sugar and pineapple rings on it and

bake it. I use my crockpot.

Green Beans Casserole-it is canned green beans, mushroom soup and canned

dried fried onions.
