Hi Nita and welcome! I'm not the list owner (apparently there is

none), but I just put your recipe in the files. Sounds like a great

way to feed kids quickly. :) When you send a recipe to the list,

if you have time it's a good idea to leave a copy of it in the

appropriate file folder

(/files)

 

Then when you're looking for something in a hurry, you can check the

files to see if it's in there. If everyone puts a few recipes in

there we'll have a fabulous collection at our fingertips.

hey nita~

hey im a vegetarian/ semi-vegan i guess and have been so on and off for

about 5 years. one thing im struggling a bit with lately is the fact i have

hypoglycemia and so its making it hard for me to get proper meals that will

keep me going for at least a couple of hours - thought this may be similar

to your interest in diabetes management. ive been trying to read a lot about

it etc but as you may know there doesn't seem to be a lot of info on be a

vegetarian who also has to control their blood sugar...and to add to that im

really trying to keep my weight stable...

Hi Vicki~

 

I have been reading for quite some time about blood sugar management and

trying to fit it in with a vegetarian diet. Everything I've read says that

using whole foods is vital for a diabetic/hypoglycemic because foods with

their fiber intact tend to absorb more slowly and not cause a sugar rush

which then is followed by a " low " . I'm reading a new book right now called

" Eat For Life " by Dr. Fuhrman and he seems to be along the lines of what

I've been thinking...vegetables should be at the bottom of the pyramid (not

just for diabetics, but for everyone) and WHOLE grains and beans above.

It's an interesting read so far. Supposedly he (along with Drs. John

McDougall and Dean Ornish and others) have helped many diabetics get

completely off medications with a vegetarian diet that was certainly high

carb--but the right carbs. My hubby hasn't wanted to do anything " extreme "

diet wise (he considers vegetarian and vegan diets extreme at the moment)

and is on three separate medications right now--two for glucose control and

one for blood pressure. He is tracking his sugars well though and has

noticed that he has better control when eating my whole foods vegetarian

meals. Fatty meats tend to raise his sugar even if eaten with next to zero

carbs (i.e. just a steak and salad, no potato or bread).

 

My personal theory is that there are many mechanisms which cause blood sugar

disruptions...a pancreas that is worn out from producing too much insulin

for too long, a liver that is not functioning properly in realeasing glucose

when sugar drops, cells that are not receptive to sugar even with the proper

insulin levels, and any combination of these. Since the liver reacts to

fats as well as low blood sugar levels, focusing only on carbs wouldn't be

the long term sollution. For hypoglycemia, I would add a small amount of

plant protein to every meal--some beans on a salad, some walnuts on oatmeal

for breakfast, some hummus for snacks (great with healthy tortilla chips or

baked pita crisps or even fresh veggies). This is just my personal opinion

though and I am not a doctor.

hey Nita~

thanks for the info - you sound very well versed on this topic! its quite a

hard thing to deal with especially when you're trying not to put on any

weight but im learning! whole grains i definately find better and dinners

are usually fine, its just the period after breakfast and after lunch i find

the most tricky! i like the idea of hummus with tortilla chips/vegies - will

give them all a try!

Peta cookbooks were the ones that really got our family over the hump.

They are fairly simple and usually delicious (not a stinker in the bunch).

Our favorite one is the COmpassionate Cook. You can get it from Peta's website

or amazon.com

Hi Debbie,

 

We have been vegetarian for 5.5 years and vegan for 4 years. I have two

kids - 7 & 4 years old. I have kid-friendly recipes on my website

(Alphabet Lentils is always a big hit with kids!) and also in my book which

I wrote to help people make the transition to a plant-based diet. Another

favorite cookbook of ours is 150 Vegan Favorites by Jay Solomon. You can

I am new to this list and thought I should introduce myself. My name is

Debbie, and my family and I have recently become vegetarians (about 1-1/2

months ago). Actually, I am striving to be vegan (baby steps. . .).

My kids have not been thrilled with the meals I have been serving, unless

they very closely resemble things that we were used to eating before

becoming vegetarian (such as shepherd's pie - made with tvp). Could anyone

recommend a good (preferably vegan) cookbook with lots of recipes that

new-vegan kids would love?

welcome! Our favortie vegan cookbook is Vegan Planet. There are

probably lots of others out there but that's the one we use the

most. We are actually vegetarian but dairy free as my husband has a

severe dairy allergy. We still eat eggs and honey. Anyway, I hope

that helps. Where are you located?

Greetings Debra. My kids like the Peaceful Palate by Jennifer Raymond. But,

I would like to say, that my kids grew up vegetarian, so I'm not sure if it

would do the same thing for your children. There is also, a cookbook, which I

am not 100% sure of the name, but it is something like Meat and Potatoes for

the the vegetarian, or The Vegetarian Meat and Potato Cookbook. I have heard

that it is a good book. Try amazon.com and look up vegan cookbooks and see if

Intro.

 

 

Hi,

 

I can't remember if I ever did an intro, so if not I'll just do it

again. I'm Shannon, I live in Louisiana with my dh and our six year

old son. I'm vegan and gluten free and my ds is trying to get there.

My dh has ulcerative colitis and cannot tolerate fruits and only 3

veggies. I'm just at a loss for what to feed these people. LOL

 

We just started Financial Peace University so now I have to figure out

how to feed all of us on a budget. I think I will not be able to buy

anything organic or even shop at Whole Foods anymore. Looks like I'm

going to have to learn to make everything from scratch and learn how

to garden. ;o)

 

I have a mayan stew recipe I'll upload as soon as I remember where it

is.

Hi everyone,

My name is Cherie and I live in North Dakota. I live on the west edge of the Red

River Valley. Although we are not directly affected by the flooding we have alot

of friends who are so we have been busy with trying to help out. I look forward

to being part of this group. I will start posting more when I have more time and

things have settled down up here.
