Cherry Quinoa

Cherry

Quinoa

  

1/2 cup chopped onion

1 clove garlic, minced

1

tablespoon vegetable oil

2 cupa broth

1 cup quinoa, rinsed

and drained

2 tablespoons chopped Anaheim pepper

1/2 teaspoon salt

1/4

teaspoon ground pepper

2 cups pitted fresh sweet cherries

8 ounces small

cooked peeled shrimp

1/4 cup chopped parsley

prepared salsa,

optional

 

Saute onion and garlic in oil; add broth, quinoa,

Anaheim pepper, salt, and ground pepper. Bring mixture to boil, reduce heat,

cover and simmer 12 to 18 minutes or until all liquid is absorbed. Fluff mixture

with a fork and gently stir in cherries, shrimp, and parsley. Serve with salsa,

if desired. Yields 6 servings.

I mesant to leave the shrimp off this recipe. It's a wonderful recipe and I

altered it from a friend and forgot to post the corrected edition in here. I

corrected it

So do you just make it without any replacement? I've never eaten shrimp so I

wasn't sure if it had a particular quality or texture that you would replace

with something else, such as tempeh perhaps. This just sounds so great - I

love both cherries and quinoa so the combination just has to be wonderful

I leave as it and now and then ad some diced firm tofu. I'll bet the tempeh

would be good in it.
