Hi there,

Welcome to the group! I have been a member for a while now, and recently

delurked. It has seemed kind of quiet here lately, but hopefully it will pick

up soon. How long have you been vegan, and how long have you known you were

celiac? As you will find from talking to others in this group, it is totally

possible to be a vegan, and still follow a GF diet. Doctors most often don't

know anything about veganism, and even if a person isn't celiac, most would

say that it's impossible to be healthy on a vegan diet. We of course know

that exactly the opposite is true :) I have been GF for only a few weeks

now, but I can say that I feel better than I've ever felt, except for the

other day when I accidently ate something with gluten in it. I paid for that

little accident for about 3 days, but now I am back to feeling good again. I

have certainly learned my lesson never to assume that something is OK for me

to eat, unless I know for sure what the ingredients are.

Anyway, just wanted to welcome you, and invite you to share anything at all,

and ask any questions you may have.

Blessings and good health to you,

Christine

Thanks for the warm welcome, everyone!

We are in Ithaca, New York, having just moved here from Boulder, Colorado. Our

2 year old vegan child is lactose-intolerant. Our eldest child is a teenager we

adopted from Kazakhstan last year. She was delighted to embrace a vegetarian

lifestyle - she'd never heard of such a thing until she met us! We also have a

4 year old, an 11 month old, and someone on the way!

Susan has been a vegetarian for almost a decade, and Evan has been a vegetarian

for almost 20 years.

Welcome Dhara!

I am from New Mexico, so we are neighbors. I have a question for you about

an ingredient in Indian food that I hope you can answer for me. I hear that

" yogurt cheese " is a good substitute for a traditional condiment for Indian

curry dishes. (Known as raita?) I know that the way to make this is to drain

plain yogurt through a cheesecloth for several hours to firm it up. I have

heard

that yogurt with gelatin (which I know is NOT vegetarian) is not acceptable

for this purpose. My question is this: I have found yogurt in my mainstream

supermarket that has pectin, not gelatin, as a thickener. Do you know if this

product will make good " yogurt cheese " ? If you mean by " strict vegetarian "

that you are vegan, please my apologies for asking you a question about dairy

products!

Also, I am currently trying out lentil soup/stew recipes to find my family's

favorite. So far, we are leaning towards a hearty one with carrots, onions,

parsnips, tomatoes, cilantro, and green lentils. Another one is Kali Dal -

more traditional, I think - with garam masala, turmeric, garbanzo beans

(chickpeas), red lentils, ginger, and coriander. Do you have a favorite you

could

share?

I could send you some of my family's favorite New Mexican recipes in

exchange, if you like.

Hi Lydia, welcome to the group!

When I first became vegetarian, it was hard for me to incorporate vegetables

into my diet also. This was largely because I was raised eating nasty-tasting

vegetables. My mom really couldn't cook, so everything we ate came from a can

or a box. Canned vegetables are generally pretty gross.

Also, most people in America overcook their vegetables. They cook all the

nutrients out of them. Who wants to eat a limp, colorless mess?

Ask yourself: what sort of vegetables do you like? Then ask yourself why you

like them. Likewise, what vegetables do you dislike, and why? It may be that

you might dislike a vegetable prepared in one way, but love it when prepared a

different way (for instance, I don't like raw carrots, but I love them steamed

or glazed or otherwise cooked- but not overcooked.)

I hope you enjoy the group! The recipes are fabulous.

hi lydia,

welcome to the group.

fesh soups and salads are my favorite ways to

incorporate more vegetables and fruits into our diet.

we have some kind of salad with almost every meal.

juicing is another way(and a great way to sneak it

into kids)to get more. i also try to keep lots of

fruit in the house to snack on.

in addition, i try to add vegetables or fruits to

dishes whenever i can....for example, spinach in the

scrambled eggs, mango in yogurt, blueberries in

pancakes, or pureed strawberries in limeade (or

margaritas!).

anyway, those are just a few ideas. hope they are

helpful.

Hail & Welcome Theresa!

Are you looking for any sort of recipes in particular? This group is

an amazing wealth of information:)

I'm transitioning into veganism (I keep finding bumps along the way -

hidden animal derivatives, you know, so I don't feel all that

successful at it just yet) from being lacto-ovo. Politics aside, I

discerned recently that I have an allergy to cow's milk. I'm in

Texas, (Beef Country) so you can imagine what an oddity people think

I am;)

Brightest Blessings!

Hi Erika! Welcome. I'm Amy, mom to Berkeley, who is two. My husband

and I have been vegan for 5 years this fall, and we've never been

healthier or happier. My son is thriving on a vegan diet.

This is a great community! Glad you're here.

Welcome! It is great to have a dad.

I hope that your whole family is eating meatless; this will keep your daughter

from feeling like an outsider in her home, cut the number of meals prepared in

half, and keep everyone heathier.

The important rules, even for meat eaters, is to eat lots of whole grains and

have a rainbow of fruits and veggies every day.  An 18 month old needs goods

fats for her developing brain, like avocado.  One of the easiest ways to be sure

that you are buying healthy foods is to avoid anything with ingredients that

your great-grandmother wouldn't recognize.

Dreena Burton has a cookbook that has a TON of information on feeding

infants and toddlers to make sure that they get all of the nutrients they

need. I am not sure if it is Everyday Vegan or Vive le Vegan, but I lean

towards Everyday Vegan (if I was at home I would check, but alas, I am

not). The cookbook also has lots of tasty meals in it :)

Hi Jeffery,

We used Sharon Yntema and Christine Beard's book " New Vegetarian Baby "

for nutritional info. There are great charts and info that we still

have posted up on our fridge - to remember how big portions are for

little kids, and how much of each kind of food they need. Best of luck

and welcome to this really supportive group!

Hi Jefferey,

We're lacto-ovos, but our son really loves these things that can easily

be vegan:

* rice with chili on top (easy, nutritious)

* bean and rice and avocado burritos or tacos

* falafel with hummus/pita/rice pilaf/salad/cucumber slices

* pasta with beans or tofu cubes and steamed veggies

* roasted veggies (beets, carrots, potatoes, onions, tomatoes,

etc.) with rice or pasta and polenta

* stir fries with spring rolls and rice (and dumpling soup if

anyone has that kind of energy/time) :-)

* squash stuffed ravioli with vegan pesto sauce

* sandwiches and soups (his favorite is a " sampler " of soups,

either left-over homemade soups or canned - we'll open 3 or 4 cans of

soup and everyone has a little bowl of each kind - it's fun - he really

loves the Amy's No Chicken Soup and minestrone).

Also, I just asked him if he has any input for you (he's 4 years old),

and he said: " corn, peas and fake chicken. " :-)

Best of luck!

Hi Jeffery,

The book, Raising Vegetarian Children was/is very helpful to us. Our

daughter is 2 years old and has been vegetarian (and dairy free) since

birth. We tend to do everything vegan because we rarely have a

resource for fresh from the farm eggs.

I've found that she isn't a fan of many foods not in their natural

state. For instance, she prefers chopped potatoes and onions to mashed

potatoes and plain beans and rice to something in a burrito, although

she'll eat the tortilla plain.

We've found great success with a minestrone soup we've made, and it's

enabled us to introduce new foods to see what she likes. We make it

with many different vegetables, including beans and pasta. She's

learned that she loves cauliflour, but not green beans. We got the

basic recipe from Raising vegetarian Children and we just modify it

with whatever vegetables we have with it.

Tofu has been a good option for us as well.

Good luck with your vegan adventures. It has been a lot of fun for us.

- Dawn M.
