Doctors most often don't know anything about veganism, and even if a person isn't celiac, most would say that it's impossible to be healthy on a vegan diet. We of course know that exactly the opposite is true I have been GF for only a few weeks now, but I can say that I feel better than I've ever felt, except for the other day when I accidently ate something with gluten in it. I paid for that little accident for about 3 days, but now I am back to feeling good again. I have certainly learned my lesson never to assume that something is OK for me to eat, unless I know for sure what the ingredients are. Anyway, just wanted to welcome you, and invite you to share anything at all, and ask any questions you may have. Our 2 year old vegan child is lactose-intolerant. Our eldest child is a teenager we adopted from Kazakhstan last year. She was delighted to embrace a vegetarian lifestyle - she'd never heard of such a thing until she met us! We also have a 4 year old, an 11 month old, and someone on the way! When I first became vegetarian, it was hard for me to incorporate vegetables into my diet also. This was largely because I was raised eating nasty-tasting vegetables. My mom really couldn't cook, so everything we ate came from a can or a box. Canned vegetables are generally pretty gross. Also, most people in America overcook their vegetables. They cook all the nutrients out of them. Who wants to eat a limp, colorless mess? Ask yourself: what sort of vegetables do you like? Then ask yourself why you like them. Likewise, what vegetables do you dislike, and why? It may be that you might dislike a vegetable prepared in one way, but love it when prepared a different way (for instance, I don't like raw carrots, but I love them steamed or glazed or otherwise cooked- but not overcooked.) I hope that your whole family is eating meatless; this will keep your daughter from feeling like an outsider in her home, cut the number of meals prepared in half, and keep everyone heathier. The important rules, even for meat eaters, is to eat lots of whole grains and have a rainbow of fruits and veggies every day. An 18 month old needs goods fats for her developing brain, like avocado. One of the easiest ways to be sure that you are buying healthy foods is to avoid anything with ingredients that your great-grandmother wouldn't recognize. I am not sure if it is Everyday Vegan or Vive le Vegan, but I lean towards Everyday Vegan (if I was at home I would check, but alas, I am not). Guest guest Posted February 19, 2009 Report Share Posted February 19, 2009 Hi Jefferey, We're lacto-ovos, but our son really loves these things that can easily be vegan: * rice with chili on top (easy, nutritious) * bean and rice and avocado burritos or tacos * falafel with hummus/pita/rice pilaf/salad/cucumber slices * pasta with beans or tofu cubes and steamed veggies * roasted veggies (beets, carrots, potatoes, onions, tomatoes, etc.) with rice or pasta and polenta * stir fries with spring rolls and rice (and dumpling soup if anyone has that kind of energy/time) :-) * squash stuffed ravioli with vegan pesto sauce * sandwiches and soups (his favorite is a " sampler " of soups, either left-over homemade soups or canned - we'll open 3 or 4 cans of soup and everyone has a little bowl of each kind - it's fun - he really loves the Amy's No Chicken Soup and minestrone). Also, I just asked him if he has any input for you (he's 4 years old), and he said: " corn, peas and fake chicken. " :-) Best of luck! Our daughter is 2 years old and has been vegetarian (and dairy free) since birth. We tend to do everything vegan because we rarely have a resource for fresh from the farm eggs. I've found that she isn't a fan of many foods not in their natural state. For instance, she prefers chopped potatoes and onions to mashed potatoes and plain beans and rice to something in a burrito, although she'll eat the tortilla plain. We've found great success with a minestrone soup we've made, and it's enabled us to introduce new foods to see what she likes. We make it with many different vegetables, including beans and pasta. She's learned that she loves cauliflour, but not green beans. We got the basic recipe from Raising vegetarian Children and we just modify it with whatever vegetables we have with it.
