Great post dawn. What's a good non-meat source. For amino acids.

Hi Jeffery,

 

The book, Raising Vegetarian Children was/is very helpful to us. Our

daughter is 2 years old and has been vegetarian (and dairy free) since

birth. We tend to do everything vegan because we rarely have a

resource for fresh from the farm eggs.

 

I've found that she isn't a fan of many foods not in their natural

state. For instance, she prefers chopped potatoes and onions to mashed

potatoes and plain beans and rice to something in a burrito, although

she'll eat the tortilla plain.

 

We've found great success with a minestrone soup we've made, and it's

enabled us to introduce new foods to see what she likes. We make it

with many different vegetables, including beans and pasta. She's

learned that she loves cauliflour, but not green beans. We got the

basic recipe from Raising vegetarian Children and we just modify it

with whatever vegetables we have with it.

 

Tofu has been a good option for us as well.

Hi jeffery,

My son loves any kinds of beans and rice (red beans and rice, black

beans, refried). He is also a huge fan of lentils and rice. Plus

pretty much any vegetable - broccoli, cauliflower, green or yellow wax

beans, swiss chard, he loves garbanzos, pretty much any way - falafel,

hummus, etc. He said his most favorite thing I make are just soups

(any kind he said LOL).

 

I don't think there's been anything we've ever made that he's not

liked (though I still can't convince him about brussels sprouts -but

he doesn't like how they look, but we still put one on his plate like

we did when he didn't like green beans and now he loves them...so I'm

still waiting LOL).

 

I think the other list posted is also true for us, too.

Hello Everyone,

I'm Rina. I am relatively new to this group. I have a lovely mother (50's) who

is a thoroughly vegetarian, and I'd like to cook for her and explore myself with

all the vegetarian foods.

Btw, I have a 'Noodle Soup' here that I carefully picked from my collection, and

I hope I can share the recipe here with you all. :->

Noodle Soup (with chinese greens)

 

Serves 6Calories per serving 220Fat per serving 4.5 g

 

1/2 vegetable stock1 tbsp chopped root ginger4 cloves garlic, halved2-3 tbsp soy

sauce, to taste300 g/ 11 oz egg noodles500 g/ 1 lb 2 oz mixed fresh greens, such

as gai lan (Chinese broccoli) and choi sam (Chinese flowering cabbage)

1. Place the stock in a large pan together with the ginger and garlic cloves,

and simmer for 30 mins. Add the soy sauce a little at a time, tasting until the

flavor reaches the desired richness.2. Cook the egg noodles by soaking them in

simmering water for 3-4 mins if fresh, or follow the instructions on the packet

if dried. Drain and divide them among the bowls.3. Simmer the greens in the

broth for 2-3 mins, then pour over the noodles and serve.

Cook's noteThe ginger in this quick and easy soup will warm you up on a cold

winter's day.
