The one thing to watch out for on their plan is the number of servings. They

don't specify how many servings of each dish because they advocate healthy,

high-fiber, low-fat diets over measuring and counting. So, if you're really

focused on the calorie count, you should add up the calories and adjust portions

to fit. If you're still hungry after getting the right amount of calories, you

can supplement with greens or other low-cal veggies.

 

Another suggestion for those who really want to count calories and servings is a

book by the American Diabetes Association : Month of Meals Vegetarian Pleasures

 

It lacto-ovo, and has a mix-and-match format where each meal consists of approx.

the same number of servings and modification suggestions for different calorie

targets.
