Guest guest Posted April 24, 2010 Report Share Posted April 24, 2010 Spicy Honey and Coconut Pineapple Kokos- och honungstäckt ananas (Swedish) Serves 4 1 fresh pineapple 1 fresh chili pepper 1/3 cup honey or maple syrup juice from 1 lime good 3/4 cups flaked coconut For serving: vanilla ice cream Peel and cut the pineapple in wedges. Split the chili lengthwise, scrape out all inner seeds and veins very carefully and make sure not to get the stuff in your eyes, and then finely chop it. Bring the honey to a boil with the chopped chili and lime juice in a frying pan. Put in the pineapple and turn the pieces over now and then until they are warm. Add the coconut and continue turning the pineapple pieces over for a minute or so. Serve plates with vanilla ice cream or soy ice cream. Guest guest Posted April 25, 2010 Report Share Posted April 25, 2010 I did make it; I used a maraba pepper, which is a slightly less deadly but equally flavorful member of the Habanero family. Grilling the pineapple would have been the way to go, but apartment- dwellers don't get to have grills...... Next time, I think I wouldn't even cook the pineapple, but just toss it with the cooked honey-chile mixture and the coconut. And I'd probably opt for the bag of grated coconut from the grocery store as opposed to the whole coconut from the Korean market which occupied a disproportionately large hunk of my available time.......
