So first let me say what a great resource! My question is this- does anyone know if there is such a thing as vegan mascarpone, or does anyone have a good recipe to make mascarpone. Guest guest Posted December 16, 2009 Report Share Posted December 16, 2009 The Café Gratitude cookbook has a raw cheese recipe – it’s their recipe for farmer’s cheese based on soaked cashews. The recipe is very versatile and they encourage people to alter it to taste. It’s on p. 85 or 92, I think. I have a few ways I use the recipe. One of the ways is a “mascarpone.” I make it light and fluffy by adding vanilla bean, and sometimes I add finely chopped dates and dried kumquats or orange peel. Sometimes I put sh-tloads (huge amounts) of fresh chives and parsley in it and make a savory green cheese. I have brought this to 3 holiday parties this month and it amazes me because people who have never even considered becoming vegetarian love it. I never tell them how much parsley they are eating lest they stop. Sometimes, I take the cheese-making process a step further. When the cheese matures and becomes dense and firm, as it will after some days, I roll it into a ball; then I roll it around in a bowl of peppercorns. It’s kind of amazing because it’s raw vegan but it looks like a real artisan cheese. Which I guess is what it is!
