Guest guest Posted January 11, 2005 Report Share Posted January 11, 2005 Oh! I adore sunchokes...I like to let them " ripen " a bit and not too crunchy, not too soft. I made a pesto type dip. What dip do you make? I prefer not to dehydrate them. The jicamas are also delicious raw and similar to the sunchokes but not as starchy. I'm fixin'to make me a jicama (potato-type)salad. OK, forget the potato...I think I'll let it go the way of the fungi...outta here. Blessings, D of DH i like yams/sweet potatoes, sliced and raw. DF thinks they are too starchy. I love a good orange sw potato chip with some guacamole. YUM! also, the sunchoke makes a splendid chip, but i've never tried to dehydrate. Also, we used those fuji apples, and made chips and served them with guac. that was awesome. gotta love that cuisinart slicing blade! one $2.99 cent bag of sunchokes make a BAG full of chips. I will try the SW pot and let you know how it goes! oh, we also did some onions. both marinated and not, in the dehydrator. i favor the marinated ones. Guest guest Posted January 11, 2005 Report Share Posted January 11, 2005 well we just made guacamole with sunchips. i was good to go!! jicama...wow. we made the " fries " and they LOOK just like fries, but taste like Jicama..LOL i find zuccini better for fries. with jicama i just peel and chop into squares and then do the same with cucumber and dump into a bowl. persian cucumbers taste better, but are harder to find organic and use lemon or lime juice. that is SO simple and SO good. no need to add anything else! and all that water is quite filling! Last night I made a delightful East Indian type salad with jicama and all kinds of goodies...garam masala was the flavor. So far my DH has loved all my raw foods I make. But then with a great book like Alissa's the inspiration is easy and creativity takes off. BTW, I must give Michele credit for that last post...she also has quite a flair to paint pictures of her yummy feasts. We have a good group here, I'm glad to be here. Michele...mushrooms is something that I've decided I won't use anymore. Since I can't cook them i don't like them raw :-( and taters too. Their best dish is stuffed mushrooms. They use the dehydrator somehow to heat them a little. It reminded me of something you would make. And yes if I'm ever near you, I'd love to come for a meal.
