Buckwheat Burgers/ was Eating Grains.....

Well, it's a take off on Alissa Cohen's Burger Buns. I adapted the recipe for

burgers and make minor adjustments.

Soak 1 C raw buckwheat groats in 2 C. water for 6 hours then sprout for 2 days

rinsing a few times a day. Will double to 2 cups.

Soak 1/3 cup flax seeds for a couple of hours until double.

Grind the buckwheat and flax in the food processor until well mixed. Add 3/4 cup

shredded carrots,

1/2 c olive oil,

1 tsp garam masala (or curry if you don't have it), 1 tsp each of fresh rosemary

and thyme or (1/2 tsp dried)...I used fresh!

2 cloves garlic

sea salt or I like Spike to taste

form into balls and smash down on the oiled teflex sheet (sprinke with sesame

seeds if you have them)...I didn't

Dry in Excalibur until tops are dried, flip onto grate and remove teflex...

You may have to smoosh the patty down more if it's not drying fast enough

Very yummy. Keep in fridge and pop into the dehydrator an hour before your meal.

You can make a sauce or gravy of your choice

Yummy!

Wow, this sounds yummy!

I have to figure our where to find sproutable buckwheat locally now.

Thanks, Diana. I once had a whole large bag of them, but I threw them away

when I moved from NYC to FL.
