Guest guest Posted February 2, 2005 Report Share Posted February 2, 2005 I just made the fudge balls from Alissa Cohen's book, Living On Live Foods. IT'S FABULOUS!!! And so darned easy to make. I actually had to modify the recipe a bit. It calls for 2 cups of raw almond butter, but I didn't have that much, so I just went one cup almond butter and one cup cashew butter. It tastes SOOOO GOOOOODDD!!!! I am absolutely thrilled. I have produce waiting for me to make them into a couple of others of her recipes, and now I'm really looking forward to it! Carolyn It is said that the Devil has all the best tunes. This is broadly true. Okay, here it is: 2 cups Dates, pitted and soaked (I did not soak mine) 2 cups Almond Butter (I used 1 cup Almond, 1 cup Cashew) 1/2 cup Carob powder In a food processor, blend the dates into a smooth paste (if you don't soak them, it won't be all that smooth, but still good). Add in the nut butter(s) and the carob powder, and blend until smooth (it's kinda like a dough). Remove the mixture from the food processor, and form into balls. Keep it in the refrigerator. Enjoy! I live near Nashville and there are not a lot of health food stores with fresh organic veggies and stuff here. Also, it's hard to tell from labels if something is prepared raw or with heat since that is not somthing they are required to list. We were eating it the first 3 months we were raw, and someone said it wasn't really raw, so I called Marantha's directly. They said the almonds were raw (when they started), but the processing was well above the temperature any raw foodist would use. " It is not intended for use by raw foodists, " were their exact words. Typically, if almond butter is NOT refrigerated, it's NOT raw.....Just an FYI in case you or anyone else was curious. I flattened the balls, and rubbed the sides in dried coconut flakes, and pressed a pecan into the top. I don't feel very virtuous, though. Next time, I need to share the amount I ate with 6 people! Yes I agree there's a problem where people end up thinking there are only about two or three foods that are 'safe' to eat. Given that raw food is obviously the healthiest diet on the planet ANYWAY, why ruin it by making it unhealthily restricted to a tiny selection of foods?
