FYI -- (I just learned this myself recently from a Hawaiian fruit

grower):

Most people don't know that limes turn yellow when they are ripe.

Yellows have 10 times the flavor and juice. Consumers expect limes to

be green and thus they are picked green.

No, to my knowledge there is no ripe green citrus fruit (other than perhaps

some recent hybrid, though I am not aware of any). Limes and lemons are

characterized by different shapes, skins, smells, tastes, etc. But both are

ripe when fully yellow!

No a lemon is a different fruit. We grow both in Bermuda in our garden. The

lime's are much smaller and I don't see them turn yellow but now I'm gonna watch

and see. I'll let y'all know, as I'm going down there this week. Happy day, Lane
