I used to make this awesome pudding with young coconut and vanilla bean - friends told me that I should have named it " raw crack " , as they were all furiously licking the bowl at the rawluck I took it to. ) I would store it " whole " in an air-tight jar until you're ready to use it, and from my experience, it is best ground in a coffee mill/grinder or a mini food-processor. I've not dehydrated it, but I don't know if that would have any effect on it, as it doesn't seem to contain much water as it is. I'd bet it would be fine if you ground it up and then stored it in an air-tight container to use it like a spice. But there's the whole shelf-life factor - I would bet that shelf-life and flavor are higher if only ground just before use. Just my thoughts, have fun with it!
