I bought a Bearss lime tree last fall and it had one lime that I let ripen on the tree. The skin was totally yellow when it fell off the tree. The flesh was green and it was an excellent lime! If you want limes and cannot find them fully yellow, choose those that are " yellowish " with a bit of green, they are MUCH close to ripe and will serve you well in most instances.
