No, to my knowledge there is no ripe green citrus fruit (other than perhaps

some recent hybrid, though I am not aware of any). Limes and lemons are

characterized by different shapes, skins, smells, tastes, etc. But both are

ripe when fully yellow!

Hello all:

Just a note to verify. I bought a Bearss lime tree last fall and it had one

lime that I let ripen on the tree. The skin was totally yellow when it fell

off the tree. The flesh was green and it was an excellent lime! Just another

reminder that food in our pop society is more about entertainment then

nutrition....

Hi all,

Although it is often difficult to find fully yellow limes, often there are

some " overripe " limes that are partially yellow. If you want limes and

cannot find them fully yellow, choose those that are " yellowish " with a bit

of green, they are MUCH close to ripe and will serve you well in most

instances. Of course, always the riper the better, up to the point of

fermentation.

Best,

Elchanan
