Prior to establishing a connection between acrylamide and food processing/cooking, acrylamide was considered a potent neurotoxin ... going all the way back to the 1960s. Remember that wikipedia is a wiki ... anyone can write stuff there. Sometimes it's great stuff, and sometimes ... more often than most people realize ... it's less than great. As has happened SO many times over the past several decades, the initial studies raising and confirming the problem were followed by a plethora of studies that " reframed " the problem in order to minimize it. Acrylamide and its gaseous relative, acrolein, are bad news for all large mammals, at the very least. It is true that there are many non-featured, less popular articles that are more biased depending on who is editing them. If you have a problem with an article, why not take a few minutes to edit it and find a study to cite to support your position? This can only help build the integrity of Wikipedia which is important as this is where many people turn to first when they are looking for information. There are many great examples of well-balanced, well informed articles there. We as a community can take more initiative to make adjustments to the articles. This acrylamide article is a good example. There is also plenty of room for improvement on articles such as Raw foodism and Raw veganism and Milk and we need to get more involved. One great way to get people to learn about the benefits of raw food is to drive them to our own sites and studies we use to support our beliefs based on these highly popular portals of information. It can be done with almost any topic and article of interest to food and health. The SAD diet corporate people know the value of playing this game and so should we. I would encourage anyone who has good references to update and complete the Wiki entry, but I guess the best thing for the rest of us is to refer others to it.
