This is almost comical to me, Nick. Prior to establishing a connection

between acrylamide and food processing/cooking, acrylamide was considered a

potent neurotoxin ... going all the way back to the 1960s. Remember that

wikipedia is a wiki ... anyone can write stuff there. Sometimes it's great

stuff, and sometimes ... more often than most people realize ... it's less

than great.

 

As has happened SO many times over the past several decades, the initial

studies raising and confirming the problem were followed by a plethora of

studies that " reframed " the problem in order to minimize it.

 

Acrylamide and its gaseous relative, acrolein, are bad news for all large

mammals, at the very least.

Good morning, After Jeff's message from earlier this morning I looked up

Acrylamide and came across this citation:

Most interesting to me was this paragraph.(my emphasis) I'd be interested to

know the difference in volume of acrylamides in raw vs SAD consumers. I'd

also be willing to help find out.

 

Cancer: According to a 2005 review, acrylamide reliably produces various

types of cancer in experimental mice and rats. However, studies in human

populations have failed to produce consistent results, and it remains

unclear whether this is due to a reduced risk in a natural setting or the

methodological difficulties inherent in such studies.

 

For example, it might be difficult to isolate the effects of acrylamide

because it is so ubiquitous in western diets.<<<<

I think its sad to hear someone dismiss Wikipedia like this. It is

true that there are many non-featured, less popular articles that are

more biased depending on who is editing them. If you have a problem

with an article, why not take a few minutes to edit it and find a

study to cite to support your position? This can only help build the

integrity of Wikipedia which is important as this is where many people

turn to first when they are looking for information.

 

There are many great examples of well-balanced, well informed articles

there. We as a community can take more initiative to make adjustments

to the articles. This acrylamide article is a good example. There is

also plenty of room for improvement on articles such as Raw foodism

and Raw veganism and Milk and we need to get more involved.

 

One great way to get people to learn about the benefits of raw food is

to drive them to our own sites and studies we use to support our

beliefs based on these highly popular portals of information. It can

be done with almost any topic and article of interest to food and

health. The SAD diet corporate people know the value of playing this

game and so should we.

Good evening,

Whether the article is complete and correct or not, there seems to be agreement

that the problem is legitimate. I would encourage anyone who has good

references to update and complete the Wiki entry, but I guess the best thing for

the rest of us is to refer others to it.
