I'm finding that staying on a raw lifestyle is rather difficult while living in a totally meat eating neighborhood, job and family. So I have decided to become a student in raw food cuisine, but I have only heard of one school that seems to offer lots of variety, Living Light Institute in Fort Bragg, CA. Do any of you know of any schools near Seattle? Has anyone attended Living Light Institute? Does anyone have any suggestions for how I can learn to prepare raw food that will dazzle meat eaters? I should mention that learning from the mass of raw food books I own has not been very successful, nor that interesting. I love simple foods, but I NEED to learn to be creative and make food taste great for others. Any suggestions will be greatly appreciated. Thanks. But it may dazzle meat eaters, I don’t know. I recommend preparing simple meals, without oils, salt, spices, and dehydrated food and without using a lot of ingredients. You can still prepare them in such a way as to be interesting and delicious, with great variety. Here are two books I can recommend: Raw ‘n Delish by David Klein and The New High Energy Diet Recipe Guide by Douglas Graham. However, Dalene's is conveniently located in Kirkland and her certification program is much more reasonably priced. Mia, the owner of Dalene's, also offers individual classes in raw food preparation. You may want to ask about it on this forum -- a couple members of the Raw Network of Washington have gone through her certification and could give you a first hand account of what to expect. I'd also like to recommend reading Doug Graham's " The 80/10/10 Diet " for a simpler approach to eating a raw vegan diet that may be more healthier and sustainable in the longterm. I think he is local and I remember taking classes from him a few years ago, but don't know how to get in touch with him. Bruce, are you out there? Maybe someone at Chaco Canyon can give you his number/email. He's a nice guy and I was impressed with his knowledge!
