So I'm on a quest to make raw marshmallows for sweet potatoes and s'mores. Does anyone know of any tried and true raw marshmallow recipes or links? The previous vegan marshmallows used a " vegetarian gelatin " that turned out to flunk the veg test: http://www.vegparadise.com/news53.html For raw marshmallows, I'd focus more on a marshmallow-type creme. Cooked marshmallows on sweet potatoes, from what I remember, would end up flatter and more like a creme anyway. That would be more doable than a puffy firmer product. Good luck either way!
